2 tablespoons olive oil
¼ cup chopped scallions
2 cups diced summer squash, patty pan & zucchini
2 cloves garlic, smashed
¼ cup dry white wine
1 cup oven dried tomato, diced
Pasta cooking water as needed to moisten mixture
Basil leaves, torn
Grated cheese
Heat olive oil in sauté pan; add chopped scallions and sauté briefly.
Add summer squash and sauté until edges begin to brown.
Add garlic; sauté briefly.
Deglaze with white wine
Add oven dried tomato and pasta water to moisten
Toss with 4 cups cooked pasta and basil.
Garnish with grated cheese.
