2 Delicata squash, cut in half lengthwise and de-seeded
1 Tbl. coconut oil
Salt and fresh black pepper (or use Aleppo pepper for a bit of spice)
Place squash facing up on sheet pan.
Smear with coconut oil.
Drizzle with a bit of honey to taste.
Season with salt and pepper.
Roast at 350 degrees for 35-40 minutes or until the squash is tender and the edges are caramelized.
