Simple and light, this refreshing vinaigrette can be used as a base when summer herbs come along. Julienne fresh basil or mint and you have a fine dressing for tomato & cucumber salad.
Makes 1 cup of dressing
Juice & zest of two lemons (about ½ cup)
1 tablespoon finely diced shallots
1 tablespoon Dijon mustard
2/3-cup light flavored oil such as canola or grapeseed
1-tablespoon sugar
Whisk ingredients together. Fresh lemon dressings are best used within 2 days.
