This is a healthier update on a classic recipe. Lean turkey, studded with sweet potatoes and kale, gets glazed with BBQ sauce. You can also throw in a handful of quinoa for extra protein. Serve with mashed root vegetables.
2 lbs ground turkey
1 cup chopped raw kale
1 cup diced sweet potato, blanched
2 egg whites, lightly whipped
2 tablespoons of milk or heavy cream
¼ cup chopped scallion
1 ½ teaspoons kosher salt
Black pepper
¾ cup panko
Combine all the ingredients except the ground turkey and panko.
Fold the mixture into the ground turkey
Place into seasoned cast iron pans or roll and place free form on a prepared baking sheet pan.
Bake at 350 for 25 minutes (depending on thickness of meatloaf) until temperature reaches 165.
Brush with BBQ sauce half way through cooking.
